Fry one copped onion and crushed garlic then add a tin of tomato, a glug of wine and thyme leaves with maybe half a cup of water. Put the muscles in (sixteen for two people) and the lid on until the shells open. I served it with gluten free tortillas brushed with garlic butter and baked in the oven until crispy.

How far we've gone, how far we're going, it's the here and the now.
Today with very sore muscles after biking and swimming all day yesterday (it was like a duathalon seriously) I made muscles for dinner, hopefully the protein will help heal my poor pippies. They were steamed in a red wine and tomato sauce with garlic, onion and thyme and a little water.
